A new travelling taco truck is celebrating its launch in Norwich.

Daisy McCorgray's new venture, Disco Kitchen, offers "next level" tacos with fillings including authentic birria beef, spiced soy mushroom, chicken and black beans.

The kitchen, which runs from a vintage 1990s horsebox, recently opened its diary for the first time and is available to book for events and pop-ups in 2024 and 2025.

Ms McCorgray explained the concept had been years in the making and sprung from her passion for food.

"When I had my son a few years ago I found myself thinking about what I really wanted to do next," she said.

"I've always wanted to do something with food so I eventually decided to step away from my career in media and publishing to pursue that."

Ms McCorgray has made tacos her staple dish as they are easily adaptable and create "a communal experience that can be shared and enjoyed with friends".

She added: "They're essentially a little 12cm plate - you can put what you want on them.

"And you can stand around and eat them socially but they can also be refined into a sit-down meal."
