Managers of a care home given a one-star food hygiene rating are confident they have already rectified the issues raised by inspectors.
Heron Lodge Nursing Home, in Wroxham, received the poor rating after an inspection from the Food Standards Agency (FSA).
The inspection, which took place on April 24, found that "major improvement was necessary" in the management of food safety and that "improvement" in the cleanliness and condition of its facilities was needed.
Hygenic food handling was rated as "generally satisfactory" though and staff at the Norwich Road venue, run by Kingsley Healthcare, say the issues have been "thoroughly addressed" in anticipation of a reinspection.
A Kingsley Healthcare spokesman said: "We regret that our documentation was not up-to-date and complete at the time of the inspector's visit.
"This was partly down to staffing shortages at the time.

"The head chef was also on holiday and we're still going through the recruitment process to take on a second chef.
"Necessary food checks were being carried out and it was simply a case of documentation not accurately reflecting that.
"We have not had complaints about the quality of our food from residents or their families and we have not had any outbreak of infection in the home that could be a result of poor food hygiene.
"The documentation problem has been thoroughly addressed and we're confident of a much better result when the inspector returns."

The most recent inspection of Heron Lodge by the Care Quality Commission, in February 2021, rated it 'good' in all categories.
It states the home provides personal and nursing care for up to 30 people. The Broads home offers residential, nursing, dementia, respite and end-of-life care.
Kingsley Healthcare's headquarters are in Lowestoft but it has care homes across the country, including in Norwich, Holt and Thetford.
