A renowned food critic's first cookbook features a recipe inspired by a dish at a Norwich restaurant.
Jay Rayner is celebrating 25 years as The Observer’s award-winning restaurant critic with the publication of Nights Out At Home.
The book, which will be released on September 5, features 60 recipes inspired by his favourite dishes across the UK and further afield.

The Observer's sister paper The Guardian posted an online extract ahead of the release and it includes charred hispi cabbage topped with crushed Scampi Fries and Frazzles.
This was inspired by his 2022 trip to XO Kitchen in Norwich, which he praised for its "face-slapping flavours".
In the cookbook, Rayner writes: "I asked the chef Jimmy Preston what was in the golden rubble of XO seasoning.

“Well,” he said slowly. “You need a pork element for XO, so that is crushed-up Frazzles.
"And then you need dried seafood so that’s Scampi Fries.” He paused. “Monster Munch might also have been involved."
