Claims that paperwork was bungled, leading to a city restaurant getting slapped with a one-star hygiene rating, has resulted in an overhaul in management.
Estabulo, in Riverside Leisure Park, was slapped with a one-star food hygiene rating by the Food Standards Agency (FSA).
The Brazilian-themed venue was told it required "major improvement" in how it managed food safety during the inspection on August 19.
However the business claims the reason for the poor rating is due to former management blunders in the handling of important paperwork.
Rob Campbell, an associate for Estabulo, said that the company "got rid" of its management team after the inspection claiming they "had not kept the manual files for safety up to date".
He added: "Everything is now back in line with the FSA report and what they wanted.
"We have booked a re-inspection, that's due soon and I'm confident we'll get the five stars back.
"The cleanliness and service is actually better now and we haven't had such a low rating for the last five years.

"We have a very high standard and none of our sites operate at a one-star rating."
On the FSA website the restaurant was deemed "generally satisfactory" regarding the way it handled its food.

However it said that the cleanliness and condition of the facilities and building required improvement.
Estabulo opened its doors in September 2021 specialising in authentic Brazilian Rodizio, or rotation, where customers pay a set rate and have unlimited access to different types of meat served table-side by waiters.
The business has 11 restaurants all dotted around the country such as Sheffield, Leeds, Wakefield and Darlington.
