The owner of a butcher shop on the city outskirts says it was "caught on a bad day" leading to a one-star hygiene rating.
Underwood's Butchers, found in the Paddock Farm shop in Mulbarton, was given with a one-star hygiene rating by the Food Standards Agency (FSA).
The artisan butchers was told it required major improvement in how it managed food safety during the inspection on August 27.
It also needs improvement in its hygienic food handling - including the preparation, cooking, re-heating and storage of food - and the cleanliness and condition of its facilities.
However the owner of the business, Tom Underwood, said he was "caught on a bad day" without the necessary paperwork in order.

He said: "The inspector came in unexpectedly and in the middle of a work day.
"They caught me on a bad day.
"I didn't have the relevant paperwork which was the main reason for the low rating.
"However the inspector came back and was very happy with the improvements we had made.
"We've got a reinspection booked in and we're very confident we'll get a better rating."
